From Bag to Meal

Have you ever looked at the items from the Community Pantry and thought, what could I actually cook with this? You're not alone. Many of our shoppers ask the same question, and often all it takes is a little inspiration to turn a bag of groceries into something tasty, nourishing, and even a bit fun.

While the Pantry always has staples like milk, rice, and pasta, we sometimes receive more unique or gourmet items, things like truffle paste, spicy buffalo mix, or coconut cream. For many families, these are unfamiliar ingredients, and it's not always obvious how to use them. But with a little creativity, these special extras can transform a simple meal into something elevated and memorable.

That's why we're sharing two simple, budget-friendly recipes made from common pantry items, one savoury, one sweet, showing how even a gourmet twist can make everyday cooking feel special.

Recipe 1: Truffle Fried Rice with Tuna & Veggies

This quick one-pan recipe transforms staples like rice and tuna into a satisfying meal. The secret ingredient? A spoonful of truffle paste, an occasional Pantry item that adds a surprisingly rich, earthy flavour.

Ingredients:

  • Rice (cooked)
  • Canned tuna
  • Mixed vegetables (tinned)
  • Truffle paste
  • Soy sauce (optional)
  • Rice crackers
  • Oil or butter
  • Salt and pepper

Instructions:

  1. Heat oil or butter in a frying pan.
  2. Add the tinned vegetables and cook off any excess moisture.
  3. Stir in the canned tuna and heat through.
  4. Mix in the cooked rice until combined.
  5. Add a spoonful of truffle paste for flavour.
  6. Season with salt, pepper, or soy sauce if you have it.
  7. Serve hot, topped with crushed rice crackers for crunch.

Why it works: High in protein, budget-friendly, and adaptable with whatever veg is on hand. Everyday staples get an instant upgrade with truffle paste, making a humble fried rice taste like restaurant fare.

Recipe 2: Coconut & Fruit Biscuit Pudding

A quick, no-bake dessert with a twist, using coconut cream instead of plain milk adds richness and a tropical flavour. Perfect for turning simple biscuits and tinned fruit into something special.

Ingredients:

  • Marie biscuits
  • Strawberry jam
  • Coconut cream or full cream milk (or milk alternative)
  • Tinned fruit (peaches, pears, etc)
  • Weet-bix

Instructions:

  1. Dip Marie biscuits quickly in coconut cream (or milk) to soften, and layer them in a dish.
  2. Spread with jam and add chopped fruit.
  3. Repeat layers to your liking, like a trifle.
  4. Chill for 1 hour.
  5. Sprinkle crushed Weet-bix on top before serving.

Why it works: No oven needed, easy for kids to help with, and feels like a special dessert made from simple pantry items. The coconut cream makes this pudding creamy, indulgent, and just a little tropical.
